Homestyle Chicken and Rice
Roasted Green Beans and OnionsIngredients
- 1 lb boneless, skinless chicken breasts
- 1½ cups low-sodium chicken broth
- 1 cup chopped onion
- ¾ cup long-grain white rice
- ½ cup chopped celery
- ½ cup chopped carrot
- ½ (8-oz) block cream cheese, cut into pieces
- 1 clove garlic, minced
- 1 bay leaf
- 1 tsp dried thyme
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp chopped fresh parsley
Instructions
- Cut chicken into 2-inch pieces, and place in a 3- to 4-quart slow cooker.
- Add broth and remaining ingredients except parsley.
- Cover and cook on LOW 8 hours or until chicken is tender; sprinkle with parsley.

- ¾ lb green beans, trimmed
- ½ cup thinly sliced onion
- 1 Tbsp olive oil
- ¼ tsp garlic powder
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Preheat oven to 350°F.
- Toss together beans, onion, oil, garlic powder, salt, and pepper on a rimmed baking sheet; spread in a single layer.
- Bake 15 minutes or until beans are tender.
