Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1½ cups low-sodium chicken broth
  • 1 cup chopped onion
  • ¾ cup long-grain white rice
  • ½ cup chopped celery
  • ½ cup chopped carrot
  • ½ (8-oz) block cream cheese, cut into pieces
  • 1 clove garlic, minced
  • 1 bay leaf
  • 1 tsp dried thyme
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp chopped fresh parsley

Instructions

  1. Cut chicken into 2-inch pieces, and place in a 3- to 4-quart slow cooker.
  2. Add broth and remaining ingredients except parsley.
  3. Cover and cook on LOW 8 hours or until chicken is tender; sprinkle with parsley.

  • ¾ lb green beans, trimmed
  • ½ cup thinly sliced onion
  • 1 Tbsp olive oil
  • ¼ tsp garlic powder
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Preheat oven to 350°F.
  2. Toss together beans, onion, oil, garlic powder, salt, and pepper on a rimmed baking sheet; spread in a single layer.
  3. Bake 15 minutes or until beans are tender.
