Grilled Chicken Thighs with Spicy Mayo

Ingredients

  • 2 lb boneless, skinless chicken thighs
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ cup mayonnaise
  • 1½ tsp Sriracha hot sauce

Instructions

  1. Preheat grill or grill pan to medium-high heat. Sprinkle chicken with salt and pepper.
  2. Place chicken on a grill rack coated with cooking spray. Grill, covered, 12 minutes or until done, turning once. Remove chicken from grill; let stand 10 minutes.
  3. Combine mayonnaise and Sriracha in a small bowl; serve with chicken.

Side Dish Ingredients

  • 3 yellow squash, cut into 1½-inch pieces
  • 1½ lb asparagus, trimmed and cut into 1½-inch pieces
  • 1 lemon, sliced
  • ½ red onion, sliced
  • ¼ cup canola oil
  • ¼ cup freshly grated Parmesan cheese
  • 1 tsp no-salt-added Greek seasoning
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat grill or grill pan to medium-high heat. Toss together squash, asparagus, lemon, onion, and oil on a 20- x 20-inch sheet of heavy-duty foil. Sprinkle with cheese, seasoning, and pepper; wrap tightly.
  2. Grill, covered, 15 to 20 minutes or until vegetables are tender.
