Cheater Chicken and Dumplings

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 1½ (32-oz) cartons low-sodium chicken broth
  • ½ tsp poultry seasoning
  • ¼ tsp salt
  • 1 cup 2% reduced-fat milk
  • 2 Tbsp cornstarch
  • 5 low-carb soft taco-size tortillas
  • 1 (8-oz) carton reduced-fat sour cream
  • ¼ cup chopped fresh parsley

Instructions

  1. Bring chicken, broth, seasoning, and salt to a boil in a large stockpot over medium-high heat. Reduce heat, and simmer 20 minutes or until chicken is done. Remove chicken, and shred. Return chicken to pot.
  2. Stir together milk and cornstarch. Stir into chicken mixture; return to a boil. Cook 5 minutes or until slightly thickened.
  3. Cut tortillas into 2- x 1-inch strips. Reduce heat to low. Drop tortilla strips into simmering broth, 1 at a time. Simmer, stirring often,10 minutes.
  4. Stir in sour cream and parsley before serving.
