Rosemary-Garlic Pork Medallions
Shaved Carrot SaladIngredients
- 1 Tbsp olive oil
- 1 Tbsp chopped fresh rosemary (or use 2 tsp dried crushed rosemary)
- ¼ tsp salt
- ¼ tsp pepper
- 2 cloves garlic, minced
- 1 (1-lb) pork tenderloin, cut into ¾-inch slices
Instructions
- Preheat grill or grill pan to medium-high heat.
- Combine oil, rosemary, salt, pepper, and garlic; rub over pork. Grill 1 to 2 minutes per side or until a meat thermometer inserted in center reads 145°F. Sprinkle with additional rosemary, if desired.

- 2 carrots
- ½ (9-oz) pkg spring mix
- 6 Tbsp roasted, salted almonds, chopped
- ¼ cup dried cranberries
- ¼ cup crumbled feta cheese
- ¼ cup balsamic vinaigrette
Side Dish Instructions
- Shave carrots into thin ribbons with a vegetable peeler. Toss together carrots and remaining ingredients in a large bowl.
