Ingredients
- 6 Tbsp almond flour
- 2 Tbsp taco seasoning mix
- 1 tsp garlic powder
- 2 (1-lb) pork tenderloins, trimmed
- 6 Tbsp olive oil, divided
Instructions
- Combine almond flour, seasoning, and garlic powder in a shallow dish.
- Cut pork into 2-inch-thick medallions; pound pork to ½-inch thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
- Brush pork with 2 Tbsp oil. Dredge pork in almond flour mixture, pressing to coat.
- Cook pork, in 2 batches, in 2 Tbsp hot oil per batch in a large skillet over medium-high heat 3 minutes per side or until done.

- 2 (12-oz) pkg broccoli florets
- 3 Tbsp olive oil
- 1 tsp garlic salt
- ¾ cup shredded Mexican-blend cheese
Side Dish Instructions
- Preheat oven to 350°F. Toss together broccoli, oil, and garlic salt on a rimmed baking sheet; spread in a single layer.
- Roast 20 to 25 minutes. Remove from oven; sprinkle with cheese. Bake 1 minute longer or until cheese melts.
