Ingredients

  • 6 Tbsp almond flour
  • 2 Tbsp taco seasoning mix
  • 1 tsp garlic powder
  • 2 (1-lb) pork tenderloins, trimmed
  • 6 Tbsp olive oil, divided

Instructions

  1. Combine almond flour, seasoning, and garlic powder in a shallow dish.
  2. Cut pork into 2-inch-thick medallions; pound pork to ½-inch thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
  3. Brush pork with 2 Tbsp oil. Dredge pork in almond flour mixture, pressing to coat.
  4. Cook pork, in 2 batches, in 2 Tbsp hot oil per batch in a large skillet over medium-high heat 3 minutes per side or until done.

  • 2 (12-oz) pkg broccoli florets
  • 3 Tbsp olive oil
  • 1 tsp garlic salt
  • ¾ cup shredded Mexican-blend cheese

Side Dish Instructions

  1. Preheat oven to 350°F. Toss together broccoli, oil, and garlic salt on a rimmed baking sheet; spread in a single layer.
  2. Roast 20 to 25 minutes. Remove from oven; sprinkle with cheese. Bake 1 minute longer or until cheese melts.
