Ingredients
- 2 large eggs
- ⅔ cup all-purpose flour
- 2 tsp garlic powder
- ¾ tsp salt
- 2 lb skinless chicken pieces (such as thighs and drumsticks)
- ¼ cup canola oil, divided
Instructions
- Preheat oven to 450°F. Whisk eggs in a shallow bowl. Combine flour, garlic powder, and salt in a second shallow bowl.
- Dip chicken in eggs, letting excess drip off; dredge in flour mixture.
- Cook chicken, in 2 batches, in 2 Tbsp hot oil per batch in a large ovenproof skillet over medium-high heat 4 minutes per side or until well browned.
- Transfer skillet to oven, and bake 20 minutes or until chicken is done.
Side Dish Ingredients
- ½ cup mayonnaise
- 2 Tbsp water
- 2 Tbsp lemon juice
- 2 Tbsp Dijon mustard
- 1 Tbsp chopped fresh rosemary (or used 2 tsp dried)
- ½ tsp salt
- ½ tsp pepper
- 4 cups finely chopped kale
- ½ cup chopped red bell pepper
- 1 (10-oz) pkg angel hair coleslaw
Side Dish Instructions
- Whisk together mayonnaise, water, lemon juice, mustard, rosemary, salt, and pepper in a large bowl. Add kale, bell pepper, and slaw; toss.
