Ingredients

  • ½ lb thin sliced chicken breast fillets
  • ½ lb organic red potatoes, cut into thin wedges
  • 1 organic red bell pepper, cut into strips
  • 1 Tbsp olive oil
  • 1 Tbsp fresh lemon juice
  • ½ tsp Greek seasoning
  • ½ lemon, thinly sliced
  • 3 Tbsp crumbled feta cheese
  • 3 Tbsp pitted kalamata olives

Instructions

  1. Preheat oven to 425°F. Place a large rimmed baking sheet in oven while preheating.
  2. Toss together chicken, potatoes, bell pepper, oil, lemon juice, and seasoning in a bowl. Arrange in an even layer on preheated pan. Top with lemon slices.
  3. Bake 20 to 25 minutes or until chicken is done and potatoes are golden. Sprinkle with cheese and olives.

Side Dish Ingredients

  • 1 English cucumber
  • ⅛ tsp kosher salt
  • ¼ cup plain Greek yogurt
  • 1 Tbsp minced fresh dill (or use ¾ tsp dried dill)
  • ½ Tbsp white wine vinegar

Side Dish Instructions

  1. Thinly slice cucumber. Sprinkle with salt; drain on paper towels for 10 minutes. Pat dry.
  2. Combine yogurt, dill, and vinegar; add cucumber. Toss.
