Southwestern Black Bean Quinoa

Ingredients

  • 1½ cups quinoa
  • 1 (12-oz) pkg frozen corn kernels
  • 2 (15-oz) can black beans, rinsed and drained
  • 1 red bell pepper, diced
  • 4 green onions, chopped
  • ½ cup chopped fresh cilantro
  • 1 jalapeño pepper, minced
  • ½ cup olive oil
  • ¼ cup lime juice
  • 2 clove garlic, minced
  • 2 tsp ground cumin
  • ½ tsp kosher salt

Instructions

  1. Cook quinoa and corn separately according to package directions; cool 10 minutes.
  2. Combine corn, beans, bell pepper, onions, cilantro, and jalapeño in a large bowl. Add quinoa; toss.
  3. Stir together oil, lime juice, garlic, cumin, and salt. Pour over quinoa mixture, and toss.
