Southwestern Black Bean Quinoa

Ingredients
- 1½ cups quinoa
- 1 (12-oz) pkg frozen corn kernels
- 2 (15-oz) can black beans, rinsed and drained
- 1 red bell pepper, diced
- 4 green onions, chopped
- ½ cup chopped fresh cilantro
- 1 jalapeño pepper, minced
- ½ cup olive oil
- ¼ cup lime juice
- 2 clove garlic, minced
- 2 tsp ground cumin
- ½ tsp kosher salt
Instructions
- Cook quinoa and corn separately according to package directions; cool 10 minutes.
- Combine corn, beans, bell pepper, onions, cilantro, and jalapeño in a large bowl. Add quinoa; toss.
- Stir together oil, lime juice, garlic, cumin, and salt. Pour over quinoa mixture, and toss.
