Indian-Style Chicken Skillet

Ingredients

  • ½ lb boneless, skinless chicken breasts
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • ⅓ cup chopped onion
  • 1 Tbsp olive oil
  • 2 cloves garlic, minced
  • 2 tsp curry powder
  • ½ cup long-grain white rice
  • 1 cup low-sodium chicken broth
  • 3 cups cauliflower florets
  • ¾ tsp hot sauce
  • ⅓ cup frozen green peas, thawed

Instructions

  1. Cut chicken into 1-inch pieces; sprinkle with salt and pepper. Cook chicken and onion in hot oil in a large nonstick skillet over medium-high heat until chicken is browned.
  2. Add garlic and curry powder; cook 30 seconds. Add rice; cook 2 minutes, stirring constantly.
  3. Add broth and cauliflower; bring to a boil, cover, reduce heat, and simmer 15 to 20 minutes or until rice is tender. Stir in hot sauce and peas; cook 2 minutes.

Side Dish Ingredients

  • 2 frozen restaurant-style breadsticks
  • 1 Tbsp butter, melted
  • ¼ tsp garlic powder

Side Dish Instructions

  1. Bake breadsticks according to package directions. Brush with butter, and sprinkle with garlic powder.
