Indian-Style Chicken Skillet
Garlic BreadsticksIngredients
- ½ lb boneless, skinless chicken breasts
 - ⅛ tsp salt
 - ⅛ tsp pepper
 - ⅓ cup chopped onion
 - 1 Tbsp olive oil
 - 2 cloves garlic, minced
 - 2 tsp curry powder
 - ½ cup long-grain white rice
 - 1 cup low-sodium chicken broth
 - 3 cups cauliflower florets
 - ¾ tsp hot sauce
 - ⅓ cup frozen green peas, thawed
 
Instructions
- Cut chicken into 1-inch pieces; sprinkle with salt and pepper. Cook chicken and onion in hot oil in a large nonstick skillet over medium-high heat until chicken is browned.
 - Add garlic and curry powder; cook 30 seconds. Add rice; cook 2 minutes, stirring constantly.
 - Add broth and cauliflower; bring to a boil, cover, reduce heat, and simmer 15 to 20 minutes or until rice is tender. Stir in hot sauce and peas; cook 2 minutes.
 
Side Dish Ingredients
- 2 frozen restaurant-style breadsticks
 - 1 Tbsp butter, melted
 - ¼ tsp garlic powder
 
Side Dish Instructions
- Bake breadsticks according to package directions. Brush with butter, and sprinkle with garlic powder.
