Creamy Peach Oatmeal

Ingredients

  • 3 peaches, divided (or use 3 cups frozen)
  • 1⅓ cups old fashioned oats 
  • 1⅓ cups water
  • 1 cup 2% reduced-fat ultra-filtered milk (see Note)
  • 4 Tbsp flaxseed meal
  • 1 tsp pure vanilla extract
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • ½ cup less-sugar vanilla Greek yogurt (see Note)
  • ¼ cup chopped pecans

Instructions

  1. Coarsely chop 2 peaches. Thinly slice 1 peach.
  2. Cook oats with water and milk according to package directions. Stir in flaxseed, vanilla, cinnamon, and salt. Stir in chopped peaches.
  3. Divide oatmeal among 4 bowls. Top with yogurt, nuts, and peach slices.
