Ingredients

  • 1 (16-oz) pkg sliced baby portobello mushrooms
  • 1 (8-oz) pkg chopped onion
  • 2 Tbsp minced garlic
  • 2 Tbsp olive oil
  • 1 (24-oz) jar marinara sauce
  • 1 (6-oz) pkg pepperoni, divided
  • 2 (5-oz) pkg large cut garlic croutons
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat oven to 425°F. Cook mushrooms, onion, and garlic in hot oil in a large skillet over medium-high heat 10 minutes. Stir in marinara sauce and half of pepperoni. Cook 1 minute.
  2. Spread croutons in a greased 13- x 9-inch baking dish. Pour pepperoni mixture over croutons. Sprinkle with cheese; top with remaining pepperoni.
  3. Bake 10 to 15 minutes or until bubbly and cheese is melted.

Side Dish Ingredients

  • 2 (12-oz) pkg classic iceberg salad
  • ½ cup Ranch dressing

Side Dish Instructions

  1. Toss together salad and dressing; chill until ready to serve.
