Mozzarella Chicken
Arugula-Tomato Salad and Warm CiabattaIngredients
- ¾ cup freshly shredded mozzarella cheese
- ⅓ cup olive oil mayonnaise
- 1½ lb boneless, skinless chicken breasts
- 1 Tbsp Italian seasoning
- ¼ tsp kosher salt
- ¼ tsp pepper
- 2 Tbsp olive oil
Instructions
- Combine cheese and mayonnaise in a bowl.
- Sprinkle chicken with Italian seasoning, salt, and pepper. Cook chicken, in 2 batches, in 1 Tbsp hot oil per batch in a large skillet over medium-high heat 6 minutes.
- Turn chicken over, and top with cheese mixture; cook 6 minutes until chicken is done and cheese is melted.
Side Dish Ingredients
- 1 (5-oz) pkg baby arugula
- 1 pint grape tomatoes
- 1 (0.5-oz) pkg fresh basil, stems removed
- 4 Tbsp olive oil, divided
- 2 Tbsp balsamic vinegar
- 3 Tbsp butter, softened
- ½ (16-oz) loaf ciabatta bread, heated
Side Dish Instructions
- Toss together arugula, tomatoes, basil, 3 Tbsp oil, and vinegar. Season with salt and pepper, if desired.
- Combine butter and 1 Tbsp oil in a bowl; stir until blended. Serve with bread.
