Mozzarella Chicken

Arugula-Tomato Salad and Warm Ciabatta

Ingredients

  • ¾ cup freshly shredded mozzarella cheese
  • ⅓ cup olive oil mayonnaise
  • 1½ lb boneless, skinless chicken breasts
  • 1 Tbsp Italian seasoning
  • ¼ tsp kosher salt
  • ¼ tsp pepper
  • 2 Tbsp olive oil

Instructions

  1. Combine cheese and mayonnaise in a bowl.
  2. Sprinkle chicken with Italian seasoning, salt, and pepper. Cook chicken, in 2 batches, in 1 Tbsp hot oil per batch in a large skillet over medium-high heat 6 minutes.
  3. Turn chicken over, and top with cheese mixture; cook 6 minutes until chicken is done and cheese is melted.

Side Dish Ingredients

  • 1 (5-oz) pkg baby arugula
  • 1 pint grape tomatoes
  • 1 (0.5-oz) pkg fresh basil, stems removed
  • 4 Tbsp olive oil, divided
  • 2 Tbsp balsamic vinegar
  • 3 Tbsp butter, softened
  • ½ (16-oz) loaf ciabatta bread, heated

Side Dish Instructions

  1. Toss together arugula, tomatoes, basil, 3 Tbsp oil, and vinegar. Season with salt and pepper, if desired.
  2. Combine butter and 1 Tbsp oil in a bowl; stir until blended. Serve with bread.
