Buffalo Chicken Burgers

Ingredients
- ½ lb ground chicken
- ¼ cup panko breadcrumbs
- ¼ cup crumbled blue cheese
- ½ tsp garlic powder
- 2 Tbsp mayonnaise
- 2 Tbsp buffalo sauce
- 2 hamburger buns
- 2 butter lettuce leaves
Instructions
- Gently combine chicken, breadcrumbs, cheese, and garlic powder in a medium-size bowl. Shape mixture into 2 patties.
- Cook patties in a grill pan or cast-iron skillet over medium-high heat 5 to 6 minutes per side or until done.
- Stir together mayonnaise and buffalo sauce. Spread mixture on buns. Top with lettuce and patties.
Side Dish Ingredients
- ½ lemon
- 3 Tbsp chopped walnuts
- 2 cups arugula
- 2 Tbsp olive oil vinaigrette
Side Dish Instructions
- Grate zest and squeeze juice from lemon half. Cook nuts in a small dry skillet over medium heat 2 to 3 minutes or until toasted.
- Toss together arugula, lemon zest, lemon juice, and vinaigrette in a bowl. Sprinkle with nuts.
