Ingredients

  • ½ lb ground chicken
  • ¼ cup panko breadcrumbs
  • ¼ cup crumbled blue cheese
  • ½ tsp garlic powder
  • 2 Tbsp mayonnaise
  • 2 Tbsp buffalo sauce
  • 2 hamburger buns
  • 2 butter lettuce leaves

Instructions

  1. Gently combine chicken, breadcrumbs, cheese, and garlic powder in a medium-size bowl. Shape mixture into 2 patties.
  2. Cook patties in a grill pan or cast-iron skillet over medium-high heat 5 to 6 minutes per side or until done.
  3. Stir together mayonnaise and buffalo sauce. Spread mixture on buns. Top with lettuce and patties.

Side Dish Ingredients

  • ½ lemon
  • 3 Tbsp chopped walnuts
  • 2 cups arugula
  • 2 Tbsp olive oil vinaigrette

Side Dish Instructions

  1. Grate zest and squeeze juice from lemon half. Cook nuts in a small dry skillet over medium heat 2 to 3 minutes or until toasted.
  2. Toss together arugula, lemon zest, lemon juice, and vinaigrette in a bowl. Sprinkle with nuts.
