Sausage-Hash Brown Pie

Ingredients
- 1 (16-oz) pkg ground pork sausage
- 6 large eggs
- ½ cup milk
- 1½ tsp Italian seasoning
- ½ tsp pepper
- 3¾ cups frozen shredded hash browns, thawed and well drained
- 2 cups spinach
- 1½ cups shredded mozzarella cheese, divided
Instructions
- Preheat oven to 350°F. Cook sausage in a large skillet over medium-high heat 6 to 8 minutes or until browned and crumbly. Remove from heat; drain. Cool slightly.
- Whisk together eggs, milk, Italian seasoning, and pepper.
- Pat hash browns dry with paper towels or a kitchen towel. Combine hash browns, sausage, spinach, and 1 cup cheese. Transfer mixture to a deep-dish pie plate or a greased 13- x 9-inch baking dish. Pour egg mixture over hash brown mixture. Top with ½ cup cheese.
- Cover with foil, and bake 30 minutes or until set. Remove foil, increase oven temperature to 425°F, and bake 10 minutes longer or until lightly browned. Let stand 10 minutes before slicing.
