Spicy Cauliflower and Broccoli Bowls
Sesame Rice NoodlesIngredients
- 3 Tbsp vegan Sriracha hot sauce
- 2 Tbsp less sodium soy sauce
- 2 Tbsp olive oil
- 2 cloves garlic, minced
- 1 (12-oz) pkg cauliflower florets
- 1 (12-oz) pkg broccoli florets
- 1 cup roasted, lightly salted cashews
- 2 avocados, sliced
- 2 green onions, sliced horizontally
Instructions
- Preheat oven to 425°F; stir together Sriracha, soy sauce, oil, and garlic.
- Arrange cauliflower and broccoli on a lightly greased foil-lined rimmed baking sheet; drizzle with Sriracha mixture, and toss.
- Bake 12 to 15 minutes, turning once, or until broccoli and cauliflower are browned and tender.
- Serve cauliflower mixture, avocado, nuts, and onions over Sesame Rice Noodles recipe.

- 2 (8-oz) pkg brown rice noodles
- 1 Tbsp sesame oil
- 2 tsp natural rice vinegar
Side Dish Instructions
- Cook noodles according to package directions. Toss noodles with remaining ingredients.
