Ingredients

  • 1 (12-oz) pkg broccoli florets
  • 2 cloves garlic, minced
  • 2 Tbsp olive oil
  • 12 large eggs, lightly beaten
  • ½ cup whole milk
  • ½ cup chopped roasted red pepper
  • ¼ tsp salt
  • ¼ tsp crushed red pepper
  • 1½ cups shredded sharp Cheddar cheese

Instructions

  1. Preheat oven to 375°F. Cook broccoli according to package directions; drain.
  2. Meanwhile, cook garlic in hot oil in an ovenproof skillet until fragrant. Stir broccoli into garlic in skillet.
  3. Whisk together eggs, milk, roasted pepper, salt, and crushed red pepper in a large bowl. Gradually pour over broccoli in skillet. Sprinkle with cheese.
  4. Transfer skillet to oven, and bake 20 minutes or until set and beginning to brown.
