Crispy-Topped Loaded Potatoes

Ingredients

  • 6 russet potatoes
  • ⅓ cup butter, cut into 6 pieces
  • 1 (8-oz) block pepper Jack cheese, shredded and divided
  • 3 cups shredded rotisserie chicken
  • 1 cup barbecue sauce
  • 1 (3.5-oz) pkg garlic pepper crispy fried onions
  • 1 (16-oz) jar sweet and spicy pickles

Instructions

  1. Pierce potatoes several times with a fork, and arrange in a spoke fashion in microwave. Microwave at HIGH 15 minutes or until tender. Cool slightly.
  2. Split and fluff potatoes; add butter and 1 cup cheese. Season with salt and pepper, if desired. Mash lightly with a fork.
  3. Meanwhile, toss chicken with barbecue sauce. Microwave at HIGH 1 to 2 minutes or until thoroughly heated.
  4. Top potatoes with saucy chicken, 1 cup cheese, fried onions, and desired amount of pickles.
