Oven-Baked Parmesan Shrimp
Bucatini with Red Sauce and Quick Green Beans

Ingredients
- 1½ cups panko breadcrumbs
- 1 cup freshly grated Parmesan cheese
- 2 tsp garlic powder
- 1 tsp kosher salt
- ¼ tsp cayenne pepper
- ½ cup all-purpose flour
- 3 large eggs
- 1½ lb peeled and deveined, large raw shrimp
Instructions
- Preheat oven to 400°F. Combine breadcrumbs, cheese, garlic powder, salt, and cayenne in a shallow bowl. Place flour in a second shallow bowl. Beat eggs lightly in a third shallow bowl.
- Toss shrimp in flour, and then dip in beaten egg, letting excess drip off. Dredge shrimp in breadcrumb mixture, pressing to adhere.
- Place coated shrimp on a greased foil-lined baking sheet. Coat shrimp with olive oil cooking spray.
- Bake 12 to 15 minutes or until shrimp turn pink and are firm.

- 1 (12-oz) pkg bucatini pasta
- 1 cup marinara sauce
- 1 (0.5-oz) pkg fresh basil, chopped
- 2 (8-oz) pkg thin green beans
Side Dish Instructions
- Cook pasta according to package directions; drain and return to pot.
- Reduce heat to medium-low. Stir in marinara sauce and basil; cook 2 to 3 minutes or until thoroughly heated. Season with salt and pepper, if desired.
- Cook green beans according to package directions. Season with salt and pepper, if desired.
