Oven-Baked Parmesan Shrimp

Ingredients

  • 1½ cups panko breadcrumbs
  • 1 cup freshly grated Parmesan cheese
  • 2 tsp garlic powder
  • 1 tsp kosher salt
  • ¼ tsp cayenne pepper
  • ½ cup all-purpose flour
  • 3 large eggs
  • 1½ lb peeled and deveined, large raw shrimp

Instructions

  1. Preheat oven to 400°F. Combine breadcrumbs, cheese, garlic powder, salt, and cayenne in a shallow bowl. Place flour in a second shallow bowl. Beat eggs lightly in a third shallow bowl.
  2. Toss shrimp in flour, and then dip in beaten egg, letting excess drip off. Dredge shrimp in breadcrumb mixture, pressing to adhere.
  3. Place coated shrimp on a greased foil-lined baking sheet. Coat shrimp with olive oil cooking spray.
  4. Bake 12 to 15 minutes or until shrimp turn pink and are firm.

  • 1 (12-oz) pkg bucatini pasta
  • 1 cup marinara sauce
  • 1 (0.5-oz) pkg fresh basil, chopped
  • 2 (8-oz) pkg thin green beans

Side Dish Instructions

  1. Cook pasta according to package directions; drain and return to pot.
  2. Reduce heat to medium-low. Stir in marinara sauce and basil; cook 2 to 3 minutes or until thoroughly heated. Season with salt and pepper, if desired.
  3. Cook green beans according to package directions. Season with salt and pepper, if desired.
