Ingredients

  • 1 (2-count) pkg 12-inch prebaked thin pizza crusts
  • 3 Tbsp olive oil, divided
  • 1 lemon
  • 1 lb boneless, skinless chicken thighs, cut into bite-size pieces
  • 2 Tbsp jarred minced garlic
  • 1 tsp dried oregano
  • 1 (12-oz) container refrigerated tzatziki dip
  • 1 pint grape tomatoes
  • 1 cup sliced English cucumber
  • ½ cup thinly sliced red onion
  • 1 cup crumbled feta cheese

Instructions

  1. Preheat oven to 400°F. Brush crusts with 2 Tbsp oil. Bake 8 to 10 minutes according to package directions.
  2. Meanwhile, grate zest and squeeze juice from lemon. Sauté chicken and garlic in 1 Tbsp hot oil in a large skillet over medium-high heat 8 minutes or until done. Stir in lemon zest, juice, and oregano. Season with salt and pepper, if desired.
  3. Spread tzatziki dip on baked crusts. Top with cooked chicken, tomatoes, cucumber, onion, and cheese.
