Ingredients

  • 2 lb lean ground beef (or use ground turkey)
  • 1 cup diced onion
  • 2 tsp chili powder
  • 2 (10-oz) cans BPA-free enchilada sauce
  • 1 (7.5-oz) pkg stone-ground cornbread muffin mix
  • ½ cup shredded sharp Cheddar cheese
  • ¾ cup milk
  • 1 large egg
  • 1 Tbsp olive oil

Instructions

  1. Preheat oven to 400°F. Cook beef and onion in a large cast-iron skillet 5 to 10 minutes or until browned; stir in chili powder and enchilada sauce.
  2. Stir together muffin mix, cheese, milk, egg, and oil; dollop and spread over beef mixture.
  3. Bake 20 minutes or until a wooden pick inserted into cornbread comes out clean.

Side Dish Ingredients

  • 3 navel oranges, peeled and sectioned
  • 2 avocados, sliced
  • 2 Tbsp fresh lime juice
  • 2 Tbsp olive oil
  • 1 Tbsp honey
  • 2 Tbsp chopped fresh cilantro

Side Dish Instructions

  1. Arrange oranges and avocados on a platter. Whisk together lime juice, oil, honey, and cilantro. Drizzle dressing over fruit.
