Ingredients
- ½ cup Italian-style panko breadcrumbs
- ¼ cup finely shredded Parmesan cheese
- 2 (4-oz) thin sliced boneless, skinless chicken breast fillets
- 1 egg, lightly beaten
- 2 Tbsp olive oil
- 2 slices mozzarella cheese
- 2 hoagie rolls
- ½ cup pasta sauce, heated (or use marinara sauce)
Instructions
- Preheat oven to 400°F. Combine breadcrumbs and Parmesan on a plate. Season chicken with salt and pepper, if desired. Dip in beaten egg; dredge in breadcrumb-cheese mixture, pressing to adhere.
- Cook chicken in hot oil in a nonstick skillet over medium-high heat 4 minutes per side or until done.
- Transfer chicken to a foil-lined baking sheet. Top with mozzarella.
- Add rolls to hot oven, cut sides up. Bake just until cheese is melted and rolls are toasted. Assemble sandwiches with pasta sauce and cheesy chicken.
