Ingredients

  • ½ cup Italian-style panko breadcrumbs
  • ¼ cup finely shredded Parmesan cheese
  • 2 (4-oz) thin sliced boneless, skinless chicken breast fillets
  • 1 egg, lightly beaten
  • 2 Tbsp olive oil
  • 2 slices mozzarella cheese
  • 2 hoagie rolls
  • ½ cup pasta sauce, heated (or use marinara sauce)

Instructions

  1. Preheat oven to 400°F. Combine breadcrumbs and Parmesan on a plate. Season chicken with salt and pepper, if desired. Dip in beaten egg; dredge in breadcrumb-cheese mixture, pressing to adhere.
  2. Cook chicken in hot oil in a nonstick skillet over medium-high heat 4 minutes per side or until done.
  3. Transfer chicken to a foil-lined baking sheet. Top with mozzarella.
  4. Add rolls to hot oven, cut sides up. Bake just until cheese is melted and rolls are toasted. Assemble sandwiches with pasta sauce and cheesy chicken.
