Chicken "Couscous" Bowl

Ingredients

  • 1 lb cauliflower, cut into florets
  • ½ cup olive oil, divided
  • 1 clove garlic, minced
  • ¼ tsp salt
  • ½ cup sliced almonds
  • 1 (5-oz) pkg baby spinach, chopped
  • 1 tsp lemon zest
  • 3 cups chopped rotisserie chicken
  • 2 Tbsp lemon juice

Instructions

  1. Preheat oven to 400°F. Pulse cauliflower, in batches, in a food processor until it resembles couscous.
  2. Combine cauliflower, ¼ cup oil, garlic, and salt in a roasting pan. Bake 25 minutes or until browned, stirring once.
  3. Meanwhile, toast nuts in a dry skillet over medium-high heat until fragrant. Combine cauliflower, nuts, spinach, lemon zest, and chicken in a large bowl.
  4. Whisk together ¼ cup oil and lemon juice; drizzle over salad, and toss.
