Chicken "Couscous" Bowl

Ingredients
- 1 lb cauliflower, cut into florets
- ½ cup olive oil, divided
- 1 clove garlic, minced
- ¼ tsp salt
- ½ cup sliced almonds
- 1 (5-oz) pkg baby spinach, chopped
- 1 tsp lemon zest
- 3 cups chopped rotisserie chicken
- 2 Tbsp lemon juice
Instructions
- Preheat oven to 400°F. Pulse cauliflower, in batches, in a food processor until it resembles couscous.
- Combine cauliflower, ¼ cup oil, garlic, and salt in a roasting pan. Bake 25 minutes or until browned, stirring once.
- Meanwhile, toast nuts in a dry skillet over medium-high heat until fragrant. Combine cauliflower, nuts, spinach, lemon zest, and chicken in a large bowl.
- Whisk together ¼ cup oil and lemon juice; drizzle over salad, and toss.
