Ingredients

  • 2 (16-oz) pkg frozen broccoli, cauliflower, and carrots, coarsely chopped
  • 1 cup water
  • 3 cups milk, divided
  • ½ cup all-purpose flour
  • 1 (32-oz) carton less sodium chicken broth
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (8-oz) block Cheddar cheese, shredded

Instructions

  1. Combine vegetables and water in a large Dutch oven; bring to a boil, cover, reduce heat, and simmer 5 minutes or until just tender.
  2. Whisk together 1½ cups milk and flour until smooth; add to vegetables, stirring constantly. Stir in broth, remaining 1½ cups milk, salt, and pepper.
  3. Cook, stirring, over medium heat until thickened and bubbly. Gradually stir in cheese until melted.

Side Dish Ingredients

  • 6 soft dinner rolls
  • 2 Tbsp olive oil
  • 2 cloves garlic, finely minced

Side Dish Instructions

  1. Preheat oven to 400°F. Split rolls, and place on a rimmed baking sheet. Brush with oil, and sprinkle with garlic. Bake 5 to 8 minutes or until toasted.
