Ingredients

  • 2 (16-oz) pkg gnocchi
  • 1 pint grape tomatoes
  • 2 large onions, sliced
  • 3 Tbsp olive oil, divided
  • 1 tsp Italian seasoning
  • ½ tsp pepper
  • ¼ cup chopped fresh basil
  • 2 (12-oz) pkg Italian-style smoked turkey sausage, sliced

Instructions

  1. Preheat oven to 450°F. Line 2 large rimmed baking sheets with parchment paper.
  2. Toss together gnocchi, tomatoes, onions, 1 Tbsp oil, Italian seasoning, and pepper. Spread in a single layer on each baking sheet.
  3. Bake 20 to 22 minutes, stirring and swapping pans after 10 minutes, until gnocchi is plump and vegetables are tender. Toss gnocchi mixture with 2 Tbsp oil and basil.
  4. Meanwhile, cook sausage in a large skillet over medium-high heat 8 minutes or until browned. Toss with gnocchi. Serve immediately.
