Roasted Gnocchi and Sausage

Ingredients
- 2 (16-oz) pkg gnocchi
- 1 pint grape tomatoes
- 2 large onions, sliced
- 3 Tbsp olive oil, divided
- 1 tsp Italian seasoning
- ½ tsp pepper
- ¼ cup chopped fresh basil
- 2 (12-oz) pkg Italian-style smoked turkey sausage, sliced
Instructions
- Preheat oven to 450°F. Line 2 large rimmed baking sheets with parchment paper.
- Toss together gnocchi, tomatoes, onions, 1 Tbsp oil, Italian seasoning, and pepper. Spread in a single layer on each baking sheet.
- Bake 20 to 22 minutes, stirring and swapping pans after 10 minutes, until gnocchi is plump and vegetables are tender. Toss gnocchi mixture with 2 Tbsp oil and basil.
- Meanwhile, cook sausage in a large skillet over medium-high heat 8 minutes or until browned. Toss with gnocchi. Serve immediately.
