Ingredients

  • 1 lb ground chicken
  • 2 Tbsp olive oil
  • 1 (16-oz) pkg sliced mushrooms
  • 1 cup chopped onion
  • 1 (24-oz) jar pasta sauce
  • 2 cups low-sodium chicken broth
  • 2 tsp Italian seasoning
  • 1 tsp garlic salt
  • 1 (19-oz) pkg frozen cheese tortellini
  • 1 (8-oz) block mozzarella cheese, shredded

Instructions

  1. Cook chicken in hot oil in a large, deep skillet over medium heat 5 minutes. Add mushrooms and onion, and cook 6 minutes or until browned and tender.
  2. Add pasta sauce, broth, Italian seasoning, and garlic salt to mushrooms in skillet; stir in tortellini. Bring to a boil, cover, reduce heat, and simmer 8 minutes or until pasta is tender.
  3. Sprinkle with cheese; cover and let stand 2 minutes or until cheese is melted.

Side Dish Ingredients

  • 2 (12-oz) pkg frozen green beans
  • 3 Tbsp olive oil
  • 1½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together all ingredients on a large rimmed baking sheet; spread in a single layer.
  2. Roast 12 to 15 minutes or until beans are tender and browned.
