Ingredients

  • 1 (10-oz) pkg frozen riced cauliflower
  • 1 (8.5-oz) pkg microwavable quinoa and brown rice
  • 2 cups shredded rotisserie chicken
  • 1 (8-oz) pkg shredded lettuce
  • 1 pint cherry tomatoes (preferably multicolored), halved
  • 1 cucumber, cut into bite-size pieces
  • 1 avocado, sliced
  • ½ cup refrigerated salsa Ranch dressing
  • ¼ cup cilantro leaves (optional)

Instructions

  1. Microwave cauliflower rice and quinoa according to package directions; toss together in a bowl.
  2. Divide cauliflower rice mixture, chicken, lettuce, tomatoes, cucumber, and avocado among 4 bowls; drizzle with dressing, and sprinkle with cilantro, if using.
