Salsa Ranch Chicken Power Bowls
Ingredients
- 1 (10-oz) pkg frozen riced cauliflower
- 1 (8.5-oz) pkg microwavable quinoa and brown rice
- 2 cups shredded rotisserie chicken
- 1 (8-oz) pkg shredded lettuce
- 1 pint cherry tomatoes (preferably multicolored), halved
- 1 cucumber, cut into bite-size pieces
- 1 avocado, sliced
- ½ cup refrigerated salsa Ranch dressing
- ¼ cup cilantro leaves (optional)
Instructions
- Microwave cauliflower rice and quinoa according to package directions; toss together in a bowl.
- Divide cauliflower rice mixture, chicken, lettuce, tomatoes, cucumber, and avocado among 4 bowls; drizzle with dressing, and sprinkle with cilantro, if using.
