Sheet Pan Chicken Souvlaki and Potatoes

Ingredients
- 2 lb thin sliced chicken breast fillets
- 1½ lb organic red potatoes, cut into thin wedges
- 2 organic red bell peppers, cut into strips
- 3 Tbsp olive oil
- 2 Tbsp fresh lemon juice
- ½ Tbsp Greek seasoning
- 1 lemon, thinly sliced
- ½ cup crumbled feta cheese
- ½ cup pitted kalamata olives
Instructions
- Preheat oven to 425°F. Place a large rimmed baking sheet in oven while preheating.
- Toss together chicken, potatoes, bell peppers, oil, lemon juice, and seasoning in a bowl. Arrange in an even layer on preheated pan. Top with lemon slices.
- Bake 20 to 25 minutes or until chicken is done and potatoes are golden. Sprinkle with cheese and olives.
Side Dish Ingredients
- 3 English cucumbers
- ¼ tsp kosher salt
- ½ cup plain Greek yogurt
- 2 Tbsp minced fresh dill (or use ¾ tsp dried dill)
- 1 Tbsp white wine vinegar
Side Dish Instructions
- Thinly slice cucumbers. Sprinkle with salt; drain on paper towels for 10 minutes. Pat dry.
- Combine yogurt, dill, and vinegar; add cucumbers. Toss.
