Ingredients

  • 1½ lb ground pork
  • 1 cup chopped onion
  • 2 Tbsp olive oil
  • 2 (15-oz) cans great Northern beans, drained and rinsed
  • 1 (16-oz) jar green salsa
  • 2 cups low-sodium chicken broth
  • 1½ tsp ground cumin
  • ½ cup chopped fresh cilantro
  • 1 (8-oz) carton sour cream

Instructions

  1. Cook pork and onion in hot oil in a large skillet over medium-high heat 6 minutes or until pork is browned and crumbly; drain.
  2. Place pork mixture in a 4- to 6-quart slow cooker; stir in beans, salsa, broth, and cumin. Cover and cook on LOW 8 hours.
  3. Stir in cilantro, and serve with sour cream.

  • 1 (7-oz) pkg cornbread mix

Side Dish Instructions

  1. Bake cornbread according to package directions.
