Ingredients

  • 1 (12-oz) pkg broccoli florets
  • 1 lb boneless, skinless chicken breasts
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp olive oil
  • 6 Tbsp low-sodium chicken broth
  • 6 Tbsp heavy cream
  • ½ tsp garlic powder
  • ½ tsp Italian seasoning
  • ½ cup grated Parmesan cheese

Instructions

  1. Cook broccoli according to package directions.
  2. Cut chicken in half lengthwise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle with salt and pepper.
  3. Cook chicken in hot oil in a skillet over medium-high heat 4 minutes per side or until browned.
  4. Reduce heat to medium; add broth, cream, garlic powder, and seasoning. Cook 10 minutes or until thickened.
  5. Stir in cheese until melted. Add broccoli, toss.
