Spinach and Carrot-Stuffed Chicken
Arugula and Roasted Vegetable Salad
Ingredients
- 6 (6-oz) boneless, skinless chicken breasts
- ¾ cup ⅓-less-fat cream cheese (6 oz)
- ½ cup shredded Parmesan cheese
- ½ cup shredded carrots
- ½ cup chopped fresh spinach
- 1 Tbsp minced fresh thyme (or use 1 tsp dried thyme)
- 1 Tbsp minced fresh chives (or use 1 tsp dried thyme)
- ½ tsp lemon zest
- ½ tsp pepper, divided
- ¾ tsp seasoned salt
- 1½ Tbsp olive oil
Instructions
- Preheat oven to 400°F. Cut a horizontal slit into thickest portion of each chicken breast to form a pocket.
- Combine cream cheese, Parmesan, carrots, spinach, thyme, chives, lemon zest, and ¼ tsp pepper in a bowl.
- Stuff chicken with cheese mixture; sprinkle chicken with seasoned salt and ¼ tsp pepper. Secure opening with wooden picks.
- Cook chicken in hot oil in a large skillet over medium heat 3 to 4 minutes per side or until browned.
- Place chicken on a foil-lined rimmed baking sheet. Bake 10 to 13 minutes or until chicken is done.
Side Dish Ingredients
- 2 sweet potatoes, cut into thin wedges
- 3 beets, chopped
- 2 Tbsp olive oil, divided
- ¾ tsp salt, divided
- 1 Tbsp red wine vinegar
- 2 tsp honey
- 1 (5-oz) pkg baby arugula
- ½ cup crumbled goat cheese
- 3 Tbsp minced fresh thyme (optional)
Side Dish Instructions
- Preheat oven to 400°F. Toss together potatoes, beets, 1 Tbsp oil, and ½ tsp salt; spread in a single layer in a foil-lined roasting pan.
- Bake 25 minutes or until browned and tender, stirring halfway through cooking.
- Whisk together vinegar, 1 Tbsp oil, honey, and ¼ tsp salt in a large bowl. Add arugula and roasted vegetables; toss. Top with goat cheese and thyme, if desired.
