Ingredients
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- ½ tsp salt, divided
- ½ cup almond flour
- ¾ tsp baking powder
- 2 Tbsp butter
- ½ cup heavy cream
- 1 large egg, lightly beaten
- 1 cup chopped tomato
- 1 cup shredded Swiss cheese
Instructions
- Preheat oven to 400°F. Cook beef, onion, and garlic in a skillet over medium heat, stirring, 6 minutes or until beef is browned and crumbly; drain. Sprinkle with ¼ tsp salt. Spread in a 9-inch pie plate.
- Combine flour, baking powder, and ¼ tsp salt in a small bowl. Cut butter into flour mixture using a pastry cutter or hands until pea-size crumbs form. Stir in cream and egg. Pour over beef mixture.
- Bake 25 minutes. Top with tomato and cheese.
- Bake 5 to 8 minutes longer or until cheese melts and knife inserted in center comes out clean.

- 2 lb zucchini
- 1 tsp lemon zest
- 2 Tbsp olive oil
- ¼ cup freshly grated Parmesan cheese
- ½ tsp salt
Side Dish Instructions
- Cut zucchini in half crosswise; cut each half into 4 lengthwise pieces.
- Sauté zucchini and lemon zest in hot oil in a large nonstick skillet over medium-high heat 3 minutes or until zucchini is lightly browned. Stir in cheese and salt.
