Pepperoni and Cheese-Stuffed Chicken
Angel Hair Pasta and Steamed Green BeansIngredients
- ¾ lb boneless, skinless chicken breasts
- ½ cup pepperoni
- 2 slices mozzarella cheese, cut into 1-inch pieces
- 2 wooden picks
- 1 tsp Italian seasoning
- 1 Tbsp olive oil
- ¾ cup marinara sauce
Instructions
- Preheat oven to 350°F. Cut chicken breasts in half lengthwise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; cut a small slit on the side of each breast to form a pocket.
- Stuff each breast with 3 pepperoni slices and 3 pieces cheese. Secure each pocket with a wooden pick. Sprinkle with seasoning.
- Cook chicken in hot oil in an ovenproof skillet over medium-high heat 3 minutes per side or until browned. Transfer skillet to oven, and bake 10 minutes.
- Top chicken with remaining cheese and pepperoni; bake 2 minutes. Heat marinara sauce according to package directions; serve with chicken.
