Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • ¼ cup sour cream
  • 3 Tbsp shredded Parmesan cheese
  • 1 tsp chili powder
  • ½ tsp garlic salt
  • ¼ tsp pepper
  • ¼ tsp lemon-pepper seasoning
  • ½ cup coarsely crushed round buttery crackers

Instructions

  1. Preheat oven to 400°F. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
  2. Place chicken in a lightly greased 9-inch baking dish; season with salt and pepper, if desired.
  3. Stir together sour cream, cheese, chili powder, garlic salt, pepper, and lemon-pepper in a bowl; spread over chicken.
  4. Cover baking dish tightly with foil; bake 25 minutes. Uncover, sprinkle with crushed crackers, and bake 10 minutes longer.

  • 1 (12-oz) pkg green beans
  • 3 slices bacon, cut in half
  • 1 Tbsp balsamic vinegar
  • 1 Tbsp butter
  • ½ (12-oz) pkg frozen corn kernels

Side Dish Instructions

  1. Preheat oven to 400°F. Divide green beans into 6 bundles. Wrap each bundle in 1 slice bacon and place on a foil-lined rimmed baking sheet. Season lightly with salt and pepper, if desired.
  2. Bake 20 to 25 minutes or until beans are tender and bacon is browned. Drizzle with vinegar.
  3. Meanwhile, melt butter in a skillet over medium heat. Add corn, and cook 8 to 10 minutes or until corn begins to brown, stirring occasionally. Season with salt and pepper, if desired.
