Creamy Tomato-Spinach Soup
Lemon-Pepper Broccoli and CauliflowerIngredients
- 1 Tbsp coconut oil
- 1 (1-lb) pkg hot Italian turkey sausage links, casings removed
- 2 cloves garlic, minced
- ½ onion, chopped
- 2 tsp Italian seasoning
- ¼ tsp salt
- ½ (13.5-oz) can unsweetened coconut milk
- ½ cup organic low-sodium vegetable broth
- 1 (14.5-oz) can organic unsalted whole tomatoes, undrained and chopped
- 1 (6-oz) pkg baby spinach, chopped
Instructions
- Melt oil in a Dutch oven over medium heat; cook sausage, garlic, and onion 5 to 6 minutes or until sausage is browned and crumbly. Stir in Italian seasoning, salt, coconut milk, broth, and tomatoes.
- Bring to a boil, reduce heat, and simmer 30 minutes or until slightly thickened. Gradually stir in spinach until wilted.
Side Dish Ingredients
- ½ lb broccoli, cut into florets
- ½ (12-oz) pkg cauliflower florets
- 1 Tbsp extra virgin olive oil
- ½ tsp red wine vinegar
- ½ tsp salt
- ½ tsp lemon-pepper seasoning
Side Dish Instructions
- Steam broccoli and cauliflower in a steamer basket over simmering water 6 to 8 minutes or until crisp-tender. Transfer to a bowl.
- Stir together oil, vinegar, salt, and lemon-pepper; drizzle over broccoli and cauliflower. Toss.
