Easy Beef Pies

Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 1 (7-oz) can mild diced green chiles
  • ¼ cup tomato paste
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ¾ tsp salt
  • 1 cup shredded Cheddar cheese
  • 1 (14.1-oz) pkg refrigerated piecrusts
  • 1 large egg, lightly beaten
  • 1 cup guacamole salsa

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. Cook beef and onion in a large skillet over medium-high heat 6 to 8 minutes or until browned and crumbly. Drain and return mixture to skillet. Stir in chiles, tomato paste, cumin, chili powder, and salt; cook 2 to 3 minutes. Remove from heat; stir in cheese. Cool 10 minutes.
  3. Unroll piecrusts, pressing together any seams that may have broken. Cut each piecrust into three triangles. Spoon beef mixture into one corner of each triangle, leaving a ½-inch border. Fold dough over filling, and use a fork to seal edges.
  4. Place filled triangles on prepared baking sheet. Brush with beaten egg. Bake 10 to 12 minutes or until golden brown. Serve with guacamole salsa.
