Turkey-Avocado Club Sandwiches

Ingredients

  • 1 avocado, mashed
  • 1 tsp lemon juice
  • 8 (1-oz) slices whole grain bread
  • ½ lb deli sliced low sodium turkey breast
  • 4 slices center cut bacon, cooked
  • 1 tomato, sliced
  • 4 green leaf lettuce leaves, halved crosswise

Instructions

  1. Combine avocado and lemon juice; spread on 4 bread slices; layer with turkey, bacon, tomato, lettuce leaves, and remaining bread slices. Cut sandwiches in half to serve, if desired.

Side Dish Ingredients

  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp honey
  • 1 tsp lemon zest
  • 2 Tbsp lemon juice
  • ¼ tsp salt
  • ½ (16-oz) pkg tricolor coleslaw
  • 1 large navel orange, peeled and coarsely chopped
  • 3 green onions, sliced

Side Dish Instructions

  1. Whisk together oil, honey, lemon zest, juice, and salt in a large bowl. Add slaw, orange, and onions; toss.
