Creamy Sausage and Kale Soup

Ingredients
- 1½ lb ground Italian pork sausage
- ½ onion, chopped
- 2 stalks celery, chopped
- 4 cloves garlic, minced
- 1 Tbsp olive oil
- 1 (32-oz) carton low-sodium chicken broth
- 1 (14.5-oz) can no-salt-added fire-roasted diced tomatoes
- 1 (13.5-oz) can coconut milk
- ½ tsp crushed red pepper
- 4 cups chopped kale
- 1 tsp pepper
- ½ tsp salt
Instructions
- Brown sausage in a Dutch oven or large saucepan over medium-high heat. Drain, and set aside.
- Sauté onion, celery, and garlic in hot oil in same pan 4 minutes or until almost tender. Add broth, tomatoes, coconut milk, red pepper, and cooked sausage. Bring to a simmer, and cook 8 minutes.
- Stir in kale, pepper, and salt, and simmer 5 minutes or until kale is tender.
