Creamy Sausage and Kale Soup

Ingredients

  • 1½ lb ground Italian pork sausage
  • ½ onion, chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 1 Tbsp olive oil
  • 1 (32-oz) carton low-sodium chicken broth
  • 1 (14.5-oz) can no-salt-added fire-roasted diced tomatoes
  • 1 (13.5-oz) can coconut milk
  • ½ tsp crushed red pepper
  • 4 cups chopped kale
  • 1 tsp pepper
  • ½ tsp salt

Instructions

  1. Brown sausage in a Dutch oven or large saucepan over medium-high heat. Drain, and set aside.
  2. Sauté onion, celery, and garlic in hot oil in same pan 4 minutes or until almost tender. Add broth, tomatoes, coconut milk, red pepper, and cooked sausage. Bring to a simmer, and cook 8 minutes.
  3. Stir in kale, pepper, and salt, and simmer 5 minutes or until kale is tender.
