Cajun Pork Loin
Lemony Garlic Green Beans
Ingredients
- 1 (3-lb) boneless pork loin roast
- 1 tsp salt
- 1 tsp pepper
- 1 Tbsp olive oil
- 3 Tbsp salt-free Cajun seasoning
- 1½ cups less sodium beef broth
- 2 Tbsp balsamic vinegar
- 2 onions, quartered
- 2 carrots, cut into 3-inch pieces
- 4 cloves garlic, minced
- 1 Tbsp chopped fresh rosemary
- 1 Tbsp cornstarch
- 2 Tbsp water
Instructions
- Sprinkle pork with salt and pepper; cook pork in hot oil in a large skillet over medium-high heat 3 to 4 minutes or until browned.
- Transfer to a 5- or 6-quart slow cooker. Sprinkle with Cajun seasoning. Add broth, vinegar, onions, carrots, garlic, and rosemary.
- Cover and cook on LOW 7 to 8 hours or until pork is very tender.
- Remove pork; let stand 10 minutes before slicing. Stir together cornstarch and 2 Tbsp water; drizzle into cooker. Cook, uncovered, on HIGH 15 to 30 minutes or until thickened. Serve pork with gravy and carrots and onions.

- 2 Tbsp butter, melted
- 1 Tbsp lemon juice
- ¼ tsp garlic salt
- ¼ tsp pepper
Side Dish Instructions
- Cook green beans according to package directions; drain well.
- Combine ghee, lemon juice, garlic salt, and pepper; drizzle over green beans. Toss.
