Cajun Pork Loin

Ingredients

  • 1 (3-lb) boneless pork loin roast
  • 1 tsp salt
  • 1 tsp pepper
  • 1 Tbsp olive oil
  • 3 Tbsp salt-free Cajun seasoning
  • 1½ cups less sodium beef broth
  • 2 Tbsp balsamic vinegar
  • 2 onions, quartered
  • 2 carrots, cut into 3-inch pieces
  • 4 cloves garlic, minced
  • 1 Tbsp chopped fresh rosemary
  • 1 Tbsp cornstarch
  • 2 Tbsp water

Instructions

  1. Sprinkle pork with salt and pepper; cook pork in hot oil in a large skillet over medium-high heat 3 to 4 minutes or until browned.
  2. Transfer to a 5- or 6-quart slow cooker. Sprinkle with Cajun seasoning. Add broth, vinegar, onions, carrots, garlic, and rosemary.
  3. Cover and cook on LOW 7 to 8 hours or until pork is very tender.
  4. Remove pork; let stand 10 minutes before slicing. Stir together cornstarch and 2 Tbsp water; drizzle into cooker. Cook, uncovered, on HIGH 15 to 30 minutes or until thickened. Serve pork with gravy and carrots and onions.

  • 2 Tbsp butter, melted
  • 1 Tbsp lemon juice
  • ¼ tsp garlic salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook green beans according to package directions; drain well.
  2. Combine ghee, lemon juice, garlic salt, and pepper; drizzle over green beans. Toss.
