Ham with Red-Eye Gravy over Cauliflower "Grits"

Ingredients

  • 1 (12-oz) pkg cauliflower crumbles
  • ¼ tsp garlic powder
  • ¼ tsp pepper
  • 1 Tbsp olive oil
  • ¼ cup low-sodium chicken broth
  • ¼ tsp hot sauce
  • 1 lb low-sodium ham steak, cut into 4 pieces
  • ¼ cup strong brewed coffee

Instructions

  1. Cook cauliflower, garlic powder, and pepper in hot oil in a saucepan over medium heat 4 minutes, stirring often.
  2. Add broth and hot sauce. Cook 12 minutes or until liquid is evaporated, stirring often.
  3. Meanwhile, cook ham in a large nonstick skillet over medium-high heat 2 minutes per side or until browned; remove from skillet, and keep warm.
  4. Add coffee, scraping skillet to loosen browned bits; simmer 2 minutes. Serve ham and gravy over "grits.".
