Ham with Red-Eye Gravy over Cauliflower "Grits"

Ingredients
- 1 (12-oz) pkg cauliflower crumbles
- ¼ tsp garlic powder
- ¼ tsp pepper
- 1 Tbsp olive oil
- ¼ cup low-sodium chicken broth
- ¼ tsp hot sauce
- 1 lb low-sodium ham steak, cut into 4 pieces
- ¼ cup strong brewed coffee
Instructions
- Cook cauliflower, garlic powder, and pepper in hot oil in a saucepan over medium heat 4 minutes, stirring often.
- Add broth and hot sauce. Cook 12 minutes or until liquid is evaporated, stirring often.
- Meanwhile, cook ham in a large nonstick skillet over medium-high heat 2 minutes per side or until browned; remove from skillet, and keep warm.
- Add coffee, scraping skillet to loosen browned bits; simmer 2 minutes. Serve ham and gravy over "grits.".
