Maple-Mustard Pork
Brussels Sprouts SlawIngredients
- 2 lb boneless pork shoulder roast, trimmed
- ½ onion, minced
- 3 cloves garlic, minced
- 3 Tbsp low-sodium soy sauce
- 2 Tbsp maple syrup
- 2 Tbsp whole-grain Dijon mustard
- 1 Tbsp olive oil
Instructions
- Place pork, onion, and garlic in a 3- to 4-quart slow cooker.
- Whisk together soy sauce and remaining ingredients; pour over pork. Cover and cook on LOW 9 hours or until pork is tender.
- Thinly slice pork; serve alongside slaw.

- ¾ lb Brussels sprouts, trimmed and sliced
- 2 Tbsp thinly sliced shallot
- 2 Tbsp olive oil
- ½ tsp apple cider vinegar
- ½ tsp honey
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Toss together all ingredients in a bowl.
