Maple-Mustard Pork

Ingredients

  • 2 lb boneless pork shoulder roast, trimmed
  • ½ onion, minced
  • 3 cloves garlic, minced
  • 3 Tbsp low-sodium soy sauce
  • 2 Tbsp maple syrup
  • 2 Tbsp whole-grain Dijon mustard
  • 1 Tbsp olive oil

Instructions

  1. Place pork, onion, and garlic in a 3- to 4-quart slow cooker.
  2. Whisk together soy sauce and remaining ingredients; pour over pork. Cover and cook on LOW 9 hours or until pork is tender.
  3. Thinly slice pork; serve alongside slaw.

  • ¾ lb Brussels sprouts, trimmed and sliced
  • 2 Tbsp thinly sliced shallot
  • 2 Tbsp olive oil
  • ½ tsp apple cider vinegar
  • ½ tsp honey
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
