Lemony Pork Lettuce Cups

Ingredients

  • 1 lb boneless pork chops
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp olive oil
  • ½ cup lemon vinaigrette
  • 1 head Bibb lettuce, leaves separated
  • ¾ cup shredded carrots
  • 2 green onions, chopped

Instructions

  1. Sprinkle pork with salt and pepper. Cook pork in hot oil in a large skillet over medium-high heat 4 to 5 minutes per side or until done. Shred or chop pork; toss with vinaigrette.
  2. Divide pork among lettuce leaves; top with carrots and onions. Roll up to serve.
