Lemony Pork Lettuce Cups

Ingredients
- 1 lb boneless pork chops
- ¼ tsp salt
- ¼ tsp pepper
- 1 Tbsp olive oil
- ½ cup lemon vinaigrette
- 1 head Bibb lettuce, leaves separated
- ¾ cup shredded carrots
- 2 green onions, chopped
Instructions
- Sprinkle pork with salt and pepper. Cook pork in hot oil in a large skillet over medium-high heat 4 to 5 minutes per side or until done. Shred or chop pork; toss with vinaigrette.
- Divide pork among lettuce leaves; top with carrots and onions. Roll up to serve.
