Peanut-Ginger Beef and Noodles

Ingredients

  • 1 (8-oz) pkg rice noodles
  • 1½ lb flank steak, trimmed and thinly sliced
  • 2 Tbsp vegetable oil
  • ⅔ cup peanut butter
  • 3 Tbsp less sodium soy sauce
  • 1 Tbsp brown sugar
  • ¼ to ½ tsp ground ginger
  • 3 green onions, thinly sliced

Instructions

  1. Cook noodles according to package directions.
  2. Meanwhile, cook beef in hot oil in a large skillet over medium-high heat 8 to 10 minutes or to desired doneness.
  3. Whisk together peanut butter, soy sauce, sugar, and ginger, adding water, 1 Tbsp at a time, until sauce is smooth and pourable. Add sauce to skillet; cook 1 to 2 minutes or until thoroughly heated. Serve mixture over noodles; sprinkle with onions.

  • 3 Tbsp sesame seeds
  • 2 Tbsp vegetable oil
