Peanut-Ginger Beef and Noodles
Sesame Snow Peas
Ingredients
- 1 (8-oz) pkg rice noodles
- 1½ lb flank steak, trimmed and thinly sliced
- 2 Tbsp vegetable oil
- ⅔ cup peanut butter
- 3 Tbsp less sodium soy sauce
- 1 Tbsp brown sugar
- ¼ to ½ tsp ground ginger
- 3 green onions, thinly sliced
Instructions
- Cook noodles according to package directions.
- Meanwhile, cook beef in hot oil in a large skillet over medium-high heat 8 to 10 minutes or to desired doneness.
- Whisk together peanut butter, soy sauce, sugar, and ginger, adding water, 1 Tbsp at a time, until sauce is smooth and pourable. Add sauce to skillet; cook 1 to 2 minutes or until thoroughly heated. Serve mixture over noodles; sprinkle with onions.
