Street Corn and Chicken Casserole

Ingredients
- 3 cups shredded rotisserie chicken
- 2 (12-oz) pkg frozen corn kernels, thawed
- 1¼ cups crumbled queso fresco, divided
- ½ cup chopped red bell pepper
- ½ cup mayonnaise
- ½ cup sour cream
- 2 tsp chili powder
- ¾ tsp garlic powder
- ½ tsp salt
- ½ cup chopped fresh cilantro
Instructions
- Preheat oven to 350°F. Combine chicken, corn, ¾ cup queso fresco, bell pepper, mayonnaise, sour cream, chili powder, garlic powder, and salt in a greased 2-quart baking dish.
- Bake 30 to 35 minutes or until thoroughly heated and bubbly. Sprinkle with ½ cup queso fresco and cilantro.
