Best Baked Chicken
Skillet Corn and Bacon-Wrapped Green BeansIngredients
- 2 lb boneless, skinless chicken breasts
- ¾ cup sour cream
- ½ cup shredded Parmesan cheese
- 2 tsp chili powder
- 1½ tsp garlic salt
- ½ tsp pepper
- ½ tsp lemon-pepper seasoning
- 1½ cups coarsely crushed round buttery crackers
Instructions
- Preheat oven to 400°F. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
- Place chicken in a lightly greased 13- x 9-inch baking dish; season with salt and pepper, if desired.
- Stir together sour cream, cheese, chili powder, garlic salt, pepper, and lemon-pepper in a bowl; spread over chicken.
- Cover baking dish tightly with foil; bake 25 minutes. Uncover, sprinkle with crushed crackers, and bake 10 minutes longer.

- 2 (12-oz) pkg green beans
- 6 slices bacon, cut in half
- 2 Tbsp balsamic vinegar
- 2 Tbsp butter
- 1 (12-oz) pkg frozen corn kernels
Side Dish Instructions
- Preheat oven to 400°F. Divide green beans into 12 bundles. Wrap each bundle in 1 slice bacon and place on a foil-lined rimmed baking sheet. Season lightly with salt and pepper, if desired.
- Bake 20 to 25 minutes or until beans are tender and bacon is browned. Drizzle with vinegar.
- Meanwhile, melt butter in a large skillet over medium heat. Add corn, and cook 8 to 10 minutes or until corn begins to brown, stirring occasionally. Season with salt and pepper, if desired.
