Rosemary and Garlic Steak Bites
Crispy Smashed Potatoes and Steamed Broccoli

Ingredients
- 2 lb (2-inch-thick) boneless beef sirloin steak, cubed
- 1 tsp salt
- 1 tsp pepper
- 1 Tbsp avocado oil
- 3 Tbsp ghee
- 5 cloves garlic, minced
- 2 Tbsp chopped fresh rosemary
- ¼ cup chopped fresh parsley
Instructions
- Cut steak into 1-inch cubes; sprinkle with salt and pepper. Cook steak, in batches, in hot oil in a large nonstick skillet over medium-high heat 5 to 7 minutes or until browned on all sides. Remove from skillet.
- Melt ghee in skillet; add garlic and rosemary. Sauté 1 to 2 minutes. Return all steak to skillet; toss to coat. Sprinkle with parsley.
Side Dish Ingredients
- 1 (1½-lb) bag baby Dutch yellow potatoes (see Note)
- 4 Tbsp ghee
- 1 tsp garlic powder
- 1½ tsp kosher salt, divided
- 1½ tsp pepper, divided
- 1 (12-oz) pkg broccoli florets
Side Dish Instructions
- Preheat oven to 450°F. Bring potatoes and water to cover to a boil in a large Dutch oven over medium-high heat; reduce heat, and simmer 10 minutes. Drain well.
- Place potatoes in a single layer on a rimmed baking sheet; smash using a potato masher until potatoes are 1-inch thick. Combine ghee and garlic powder. Brush potatoes with ghee; sprinkle with 1 tsp each salt and pepper.
- Bake 20 minutes or until browned and crisp. Sprinkle with ½ tsp each salt and pepper.
- Cook broccoli according to package instructions.
