Ingredients

  • ¾ lb skirt steak (or use flank steak or London broil)
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 shallot, chopped
  • 1½ tsp olive oil
  • 6 Tbsp heavy cream
  • 6 Tbsp low-sodium chicken broth
  • ¾ cup grated Asiago cheese (or use Parmesan)

Instructions

  1. Preheat broiler. Place steak on a rimmed baking sheet; sprinkle with salt and pepper. Broil 4 to 6 minutes per side or until desired doneness. Let stand 5 to 10 minutes before slicing across the grain.
  2. Meanwhile, cook shallot in hot oil in a small saucepan over medium-high heat 2 to 3 minutes or until lightly browned and tender.
  3. Add cream and broth; bring to a boil, reduce heat to a simmer, and cook 5 minutes or until thickened. Add cheese, stirring to combine. Serve sauce with steak.

  • ¼ cup chopped pecans
  • ¼ cup olive oil vinaigrette
