Cherry Cola Pulled Pork Sandwiches

Ingredients

  • 1½ lb boneless Boston butt pork roast
  • 1 (12-oz) bottle cherry cola soft drink
  • ¼ cup ketchup
  • 2 Tbsp packed brown sugar
  • 1½ Tbsp Worcestershire sauce
  • 1 Tbsp Dijon mustard
  • 3 hamburger buns

Instructions

  1. Place roast in a lightly greased 4- to 5-quart slow cooker; pour cola over pork. Cover and cook on LOW 8 to 10 hours or until pork is tender.
  2. Remove pork from cooker and shred with 2 forks, discarding fat.
  3. Meanwhile, bring liquid from cooker to a boil in a saucepan over medium-high heat; add ketchup, sugar, Worcestershire sauce, and mustard. Boil until thickened. Toss shredded pork with sauce and serve on buns.

  • ½ (16-oz) pkg tricolor coleslaw
  • 1 Granny Smith apple, cut into matchsticks
  • 1½ Tbsp olive oil
  • 1½ Tbsp white wine vinegar
  • 1 Tbsp honey
  • ½ (32-oz) pkg frozen French fries

Side Dish Instructions

  1. Toss together coleslaw, apple, oil, vinegar, and honey in a large bowl; sprinkle with salt and pepper, if desired.
  2. Bake fries according to package directions. Season with salt and pepper, if desired.
