Barbecue Chicken Tostadas

Ingredients

  • 4 (0.63-oz) tostada shells
  • 1½ cups diced rotisserie chicken
  • ⅓ cup barbecue sauce
  • ¾ cup shredded reduced fat Cheddar cheese
  • 1 avocado, diced
  • ½ cup refrigerated salsa
  • ¼ cup sour cream
  • 2 green onions, chopped

Instructions

  1. Preheat oven to 375°F. Place tostada shells on a baking sheet.
  2. Combine chicken and barbecue sauce; divide among among tostada shells, and sprinkle with cheese. Bake 6 to 8 minutes or until throughly heated and cheese melts.
  3. Top tostadas with avocado, salsa, sour cream, and onions.

Side Dish Ingredients

  • ¼ cup reduced fat mayonnaise
  • 1½ Tbsp apple cider vinegar
  • ¼ tsp celery salt
  • 3 cups tricolor coleslaw

Side Dish Instructions

  1. Whisk together mayonnaise, vinegar, and celery salt in a bowl. Add slaw; toss.
