Tuscan Chicken-Gnocchi Soup

Ingredients
- 1 (10-oz) pkg mirepoix
- 2 cloves garlic, minced
- 2 Tbsp olive oil
- 2 (32-oz) cartons low sodium chicken broth
- 1½ tsp Italian seasoning
- ½ tsp pepper
- 1 (16-oz) pkg potato gnocchi
- 1½ cups shredded rotisserie chicken
- 2 tsp dried oregano
Instructions
- Sauté mirepoix and garlic in hot oil in a Dutch oven over medium-high heat 5 minutes. Add broth, seasoning, and pepper; bring to a boil.
- Add gnocchi and chicken; cook, stirring occasionally, 7 to 8 minutes or until gnocchi is done. Stir in with oregano.
