Ingredients
- 1 (14.5-oz) pkg gingerbread cake and cookie mix
- 1 (12-oz) pkg bakery buttercream icing
- 1 Tbsp ground ginger
- 1 tsp vanilla extract
Instructions
- Preheat oven to 375°F. Line 2 rimmed baking sheets with parchment paper. Prepare cookies according to package directions; cool.
- Meanwhile, beat icing, ginger, and vanilla with a mixer. Spread 2 Tbsp icing on half of cookies, and top with remaining cookies to make sandwiches.
